Ingredients:
- raw potatoes (floury)
- eggs
- flour
- nutmeg
- salt and pepper
- carrots
- cauliflower
- celery
- white or red onions
- vinegar
- mustard seeds
- coriander seeds
- garlic cloves
- sugar
- dill or parsley
Anti-waste tips:
- Freeze leftover raw vegetables for a few weeks
- Can be used past the best-before date: spices, flour (look, smell and taste)
Preparation:
Cut the vegetables into thin slices and the cauliflower into florets. Heat the vinegar with the water, then add the spices, salt and sugar. Bring to a boil and pour over the vegetables. Leave to marinate for 2 days in the fridge.
Peel the potatoes and grate them coarsely. Place them in a bowl with the eggs and flour, then season with salt, pepper and nutmeg. Mix well. Heat the waffle iron and grease it with oil. Pour two tablespoons of batter into the waffle iron and cook the waffles for about 8 minutes.
