Ingredients:

  • 500 g bananas (about 2–3 bananas)
  • 300 g cane sugar
  • 150 ml lemon juice (about 2 lemons)
  • juice of ½ an orange
  • ½ vanilla pod

Anti-waste tips:

  • Peel bananas when they start to brown, cut them into pieces and freeze them
  • Can be used past the best-before date: cane sugar (look, smell and taste)
  • Grate organic lemons and freeze the zest for later use

Preparation:

Put the lemon juice, orange juice and sliced bananas in a saucepan. Add the cane sugar and cook everything over medium heat for about 45 minutes. If you prefer a smoother jam, blend it at the end of cooking. Pour into clean jam jars and leave to cool.
