Ingredients:
- 4 slices of bread or 4 bread rolls
- 2 pears or apples
- 2 tablespoons of sugar
- juice of 1 lemon
- ½ packet vanilla sugar
- 250 ml milk
- 2 eggs
- butter
- a pinch of salt
- 25 g raisins or dried cranberries
- 25 g nuts (walnuts or pine nuts)
- optional: cinnamon and/or icing sugar
Anti-waste tips:
- Use stale bread or hard rolls
- Use ugly fruit and cut away any damaged parts
- Can be used past the best-before date: sugar, vanilla sugar, raisins, cranberries, nuts, cinnamon (look, smell and taste)
- Grate organic lemons and freeze the zest for later use
Preparation:
Preheat the oven to 200 °C. Butter a baking dish. Slice the bread rolls thinly, lightly toast the bread slices in the oven. Peel the pears or apples and cut them into quarters. Heat a little butter and one tablespoon of sugar in a frying pan. Quickly sauté the fruit, deglaze with the lemon juice, and let cool. Whisk together the milk, eggs, salt, vanilla sugar and remaining sugar. Briefly dip the bread slices in this milk-egg mixture, then layer them alternately with the fruit in the baking dish. Sprinkle with raisins and nuts. Bake in the oven at 200 °C for 20–25 minutes. Remove from the oven, let cool slightly, then dust with icing sugar and/or cinnamon.
